Before I decided to start eating meat, questions would come up all the time such as, “how do you get your protein?” or “Is your husband a vegetarian too?”
I used to call my husband a “vegetarian by default.” I do 99% of the cooking and I didn’t cook meat. Every once in a while he buys deli meat or something to put on the grill, but very rarely. He orders chicken or burgers if we go out to eat, but since we don’t eat out very much, he is a pretty much a semi-vegetarian. He eats whatever I make! He is willing to try to new foods, try new recipes and willing to give anything a go at least once!
This lentil taco recipe is one of his favorites, along with enchiladas, kale & lentil stew, & quinoa pizza bites.
Not only are lentils high in protein, they are also high in iron, fiber, low in fat, low in sodium and they are inexpensive! Make sure to get the green or brown lentils for this recipe. Do not buy the red or orange lentils for this recipe because you will end up with a mushy consistency and a totally different meal. Rinse the lentils before using and also sort through the lentils to make sure you don’t have any small stones or rocks accidentally in the bag. It happens sometimes with dried beans or lentils.
My one year old loves beans and lentils, these are a great food for her too! When I make these knowing she’ll be eating them, I use canned tomatoes instead of salsa, just so it’t not too spicy for her.
