Please note, this recipe is very dense. With the eggs and pancakes, the outside will get nice and firm, but the inside is slightly mushy. The little ones love it!

No Sugar Added Pumpkin Pancake

Make sure your baby has tried each ingredient separately before combining them to make sure there are no allergens. Cut into finger pieces for baby, no butter or syrup needed for your little one! Let's try to not let this next generate get as hooked on sugar as we are!

Ingredients
  

  • 1 cup Canned organic pumpkin
  • 1/2 cup Old fashioned oats
  • 2 whole Organic eggs
  • Pinch Cinnamon
  • Pinch Ground ginger
  • Tablespoons Water

Instructions
 

  • Combine all ingredients in blender.
  • The recipe should be nice and thick,
  • If you are making it for yourself (not a baby) you can use honey or pure maple syrup in place of water (babies should never have honey). 
  • Heat skillet on low and grease the skillet with butter.
  • Cook pancakes on low heat, about 8 minutes per side. The pumpkin makes it a thick & sticky texture- perfect for little fingers! If it's still partally "sticky" inside- that is how its supposed to be!
  • It's a mushy, hearty, nutritious, dense pancake!

    It didn’t work for me. Even after 4 tbsp water it was much too thick. Over 20 min on low and the centers were still uncooked.

      I changed it up a bit because I made these for my toddler but they were a huge hit. I added more liquid than the recipe calls for but I also added some flaxseeds so that may be why mine came out thicker.

    I did add a little more liquid but it’s turned out great. I also added in nutmeg along with the cinnamon.

    Turned out perfectly for a baby doing BLW! I ended up adding about ½ cup all purpose flour, then ½ teaspoon each of baking soda and baking powder for more of a dense, puffy pancake for my toddlers!

    I put the batter in my mini waffle maker and my daughter loved these for breakfast this morning! Fantastic

  5. I baked them in the oven instead it cooked more constantly. 450 for 12 minutes. I used a mini cupcake tin.

  6. This recipe did not work for me. The batter wouldn’t cook through. I think the ratio of pumpkin to oats needs to be adjusted. (More oats less pumpkin) to get it to actually cook 🙁

    I couldn’t eat it. The 1 year old liked the but I was hoping to eat as well and it was disgusting. Very mushy and will not be making ever again.

  8. I used baby cereal in place of oats because I didn’t have any on hand. They turned out great! Baby girl loves them.

    Mine came out great!
    I did blend the oats first to make oat flour. Then cooked on medium but spread the batter thin and it came out perfect! 10 month old loved!
