One Pan Roasted Chicken & Veggies

This is a super easy family meal! I love it because it all cooks in one pan, I don't even have to get anything else dirty, it has all components of a healthy meal, everyone in the family loves it, and it is extremely versatile! This serves 2-4 people, double if you've got a hungry family or want more leftovers! 😉 

Ingredients
  

  • 1 lb Chicken thighs
  • 2 cups Brussels sprouts trimmed and cut in half
  • 1 medium pc Sweet potatoes cubed into 1 inch pieces
  • 1 tbs balsamic vinegar
  • 1 tbs avocado oil great for cooking, can also use olive oil
  • 1/2 tbs ground turmeric superfood ingredient
  • 1/2 tbs ground ginger
  • 1/2 tbs cinnamon
  • 1/2 tbs paprika
  • 1/2 tsp black pepper
  • 1/2 tsp good quality salt

Instructions
 

  • Preheat oven to 350.
  • Put foil over baking pan for easy clean up, spray with cooking spray To make super simple, place chicken and veggies on pan, drizzle with avocado oil and balsamic vinegar. Use your hands to shake and coat well.
  • Sprinkle with all the seasonings and spices. Again using your hands or tongs, coat the veggies & chicken well.
  • Bake for 30 minutes or until chicken is thoroughly cooked.

Notes

Something I often do to ensure my sweet potatoes are soft enough is to microwave them before baking. So once they are cubed, place in glass bowl and microwave for about 3-4 minutes, just to start to soften them. Then place on baking pan with other veggies/meat.
You could easily replace the veggies I chose with any others that your family likes & prefers! Try mushrooms, green beans, sliced carrots, bell peppers, zucchini or anything else!
